Late harvest of young Chardonnays from Barzy / Marne blended with Meuniers from Connigis. Manual destemming, pellicular maceration. Ancestral technique by pumping over twice a day, in open oak barrels for long weeks. Natural fermentations. No filtration no fining, no racking and no addition of sulphite at bottling. Zero dosed.
